The food industry uses adipic acid as an acidulant in gelatins, bottled beverages, gelatin desserts and powdered fruit concentrates. It gives food a tart flavor and its low pH prevents the growth of some microorganisms that cause food decay. It is used as a buffer to keep pH range between 2.5-3.0 as well as a gellifier in jellies, gelatins and desserts.
Its hygroscopic nature gives dry products a greater lifespan during storage, even when exposed to highly humid environmental conditions.
In some cases, cheese contains adipic acid in its formulations.
